What do you do when you are looking for a very special cookbook? Perhaps it's out of print, published abroad or on an unusual topic. Or maybe you don't even know what book is right and need a recommendation. Do you wander on down to the nearest all-purpose bookstore and hope their food and wine section is broad enough for you?

Not likely. With notable exceptions, clerks at the general bookstores often lack the breadth of knowledge you need to find the answers to your questions. On the other hand, the people who work at cookbook stores know their subject intimately. And many of them are willing to search for the right book if they don't have it in stock.

Stores that specialize in cookbooks can be found all over the world. Many of them are willing to take orders by phone, fax or e-mail. A few even have web pages. In order to find them we turned to two wonderful souces, one published and one on-line.

The International Cookbook Revue's International Directory of Cookbook Stores ($25.00) available from SPA -- The International Cookbook Review, Lagasca, 27, 1.E, 28001, Madrid, Spain, Tel. 34-1-575-93-50, Fax 34-1-575-99-62, e-mail 101363.1076@compuserve.com lists 62 food and wine specialty book sources by country. The Directory is also available c/o SPA at 645 5th Avenue, Suite 703, New York, NY 10022, USA, Tel. (212) 753-6849. For local information, we sent out messages to food-related newsgroups all over the internet.

Some stores carry only new books; others specialize in used, rare or out-of-print stock. All of them are worthy of a browse. They are owned and staffed by helpful people who love food and know the business.

When all else fails, there are some outstanding on-line services for ordering food-related books -- such as Sally's place at www.bpe.com/food/books/index.html. Though poking around a well-appointed store beats sitting at your desk any day, it is reassuring to know that in a pinch the perfect book is just as near as your computer.
