Chinese New Year Cake

(Serves 8 to 10)

1 pound glutinous rice flour (it comes in a one-pound plastic bag)
1 cup sugar
1 teaspoon baking powder
¾ cup cooking oil
3 eggs, beaten
2 cups whole milk

Cooking spray
Flour for dusting the baking pan
20 pieces whole pecans
Whipped cream
Chocolate syrup
Mandarin oranges
Strawberries
Mint leaves


1. Preheat oven to 350 degrees.

2. In a mixing bowl, combine rice flour, sugar, baking powder, oil, eggs, and milk. Use a whisk to blend well.

3. Spray cooking spray lightly on a 10-1/2-inch diameter baking pan, and dust with flour. Shake off any excess flour. Pour cake mixture into the pan.  Arrange pecans on top.  Bake in the preheated oven for 1 hour. Cool.

4. Cut cake into serving pieces.  Garnish with whipped cream, chocolate syrup, Mandarin oranges, strawberries, and mint leaves.
