Leith's offers classes for amateurs who wish to improve their cooking skills both during evenings and holidays (remember the more civilized Europeans take longer holidays than we do). Beginners and advanced evening courses last ten sessions. Single demonstration classes are held on weekday evenings and Saturday mornings.

Six times a year chef Natalia Arizmendi, a Grand Diplome of the Cordon Bleu, offers week-long classes in French cuisine in an 18th century country house in France's Armagnac country. Enrollment is kept to a maximum of nine. In addition to cooking classes, students visit the local market and neighboring vineyards. Menus and classes vary with the seasons.

Cordon Bleu's Gourmet Sessions last anywhere from three days to four weeks and entail concentrated introductions to the essentials of French cuisine. Special courses include cooking light, marrying food and wine, food hygiene, bread baking and pastry. The school even offers a half-day cooking class for children. If you're after cooking lessons in paradise, Bali is your place. But first you have to get out of Denpasar and the beaches packed with tourists as quickly as you can and head for the artists' town of Ubud where Ibu Mas will give you as many lessons as you care to take. She can either arrange to put you up in one of her guest cottages or you can stay in a nearby hotel. I've lived in Bali and believe me you don't need air conditioning. Little cottages on the rice paddies, mosquito nets at night, flowers and fruits everywhere and a fine cook teaching you the intricacies of her cuisine. Go for it.

Giuliano Bugialli offers four week-long classes in Florence and the surrounding countryside and one cooking class in Sicily starting first in Florence and then traveling throught Sicily for regional cooking classes. The Florence trip involves five classes, some of them taught in the city and some in Bugialli's kitchen in the Chianti Classico country. The Hotel Gallery Art is the hotel in Florence where students stay.

Giuliano does many one or two days cooking classes in the US: New Jersey, Washington DC, Dallas, Los Angeles, and San Francisco.

In the hills overlooking Florence, this estate has been producing wine and olive oil since the year 804. Their food and wine workshops began much later. Cooking workshops are held in the villa's family kitchen and are run by Countess Lisa Contini Bonacossi with lectures by visiting chefs. Wine classes are led by Nicholas Belfrage. Programs run five days each with a maximum of 12 students. Accommodations are provided in a wing of the Fifteenth century villa.
